Here is a simple salad that I like to make often. It takes only a few minutes and is a good compliment to a meal or by itself as a light meal or snack.
Begin with a handful of fresh spinach.
Chop the spinach to your liking.
Put in a bowl and set aside.
Peel and shred one carrot.
Put in the bowl with the spinach.
Chop or crumble by hand a small handful of walnuts. Put in the bowl.
Add some kosher salt and freshly ground pepper to your liking.
Add a little of your favorite dressing, stir and enjoy!!
