I’ve never been able to reheat couscous properly, at least not in a way that I find satisfying, so I decided to improvise a little to make a cold dish. Hope you enjoy!
Let couscous chill in a container in the fridge. Then add and stir together:
Fresh lemon juice
Feta cheese
Dried chopped dates and raisins
Extra virgin olive oil
Salt, pepper, and basil to taste
Cayenne and a little honey if you’re so inclined
I find it’s usually best after sitting overnight in the fridge.
